Quick and Healthy Snacks For the Little Ones

To mark Global Child Nutrition Month, in April, below are ideas for getting the youngest members of your family on track to a lifetime of healthy eating habits. Mealtimes the Slimming World way means piles of delicious, kid-friendly favorites that are naturally low in fat, sugar and salt.


  • Make tacos using wraps with ham, chicken or cheese as fillings. Include homemade salsa (see recipe below) and it’ll be a winner! Homemade kebobs are also fun – cherry tomatoes, cubes of cheese, cucumber and bell peppers on skewers with a healthy dipping sauce work wonderfully together.
  • Try a tuna crunch sandwich: Mix 1 tablespoon fat-free mayonnaise with tuna (canned in water). Add very finely chopped crunchy vegetables such as cucumber, bell peppers and scallions.
  • How about vegetable sticks and dips? Children love the novelty factor of dips, and they’re a great way of getting them to eat vegetables. Fat-free plain yogurt mixed with garlic and grated cucumber makes a tasty tzatziki dip.
  • To raise the “wow” factor of fruit, serve a chopped banana in vanilla-flavored yogurt, or mix chopped strawberries, apple, grapes and melon with a little orange juice.


Mom of seven loses 140 pounds

Through healthier cooking and increased activity, the whole family has benefited



Rebecca Fyfe (pictured), a Californian mom of seven, has lost more than 140 pounds since joining Slimming World. As the weight began to come off, she kept a blog of her progress, often noting how her newly healthy habits were helping not only herself, but her husband and kids. Among her entries:

Homemade Salsa

Serves: 4
Prep time: 15 minutes

Ingredients:
4 cups ripe tomatoes, cored and chopped
5 jalapeno peppers, seeded, cored and chopped
2 medium yellow onions, peeled and chopped
½ green bell pepper, cored, seeded and chopped
1 cup canned tomato puree
1 tsp salt
1 tsp peeled and finely chopped or crushed garlic
2 tbsp chopped fresh coriander
1½ tbsp red wine vinegar
Salsa jalapena to taste

1. Mix all the ingredients together and add enough salsa jalapena to suit your taste.

(Warning – this stuff is hot)! This salsa is great on top of scrambled eggs for a breakfast with a kick!

Tip: Cover in plastic and store in your refrigerator for several days.
