It's still summer, but Fall is sneaking up quickly. Have you been back-to-school shopping yet? I haven't, but I've been making out my list. That first week of school is busy and tiring... for students and parents (and teachers of course). An afternoon snack is essential! When I came home from school I was always starving and had to look through the refrigerator for something to snack on. There was no way I could wait until supper time.
The milk tastes delicious and would make great snack options for the kids. There are several recipes on their website using their milk products too. I made the Banana Rolls because it looked like something everyone would enjoy and it was easy and quick. We all loved it (including Nellie and Dixie) and would make it again - even though they can be a bit messy. Now onto those No Bake Energy Bites. MH wanted me to wait until they went hunting this fall to make them so he wouldn't be tempted to eat all of them, but I made them anyway and they were gone before I got a picture! I would say both of these recipes were a hit. Here are the recipes:

1-2 tsp honey or agave nectar
½ cup peanut butter or cream cheese
Pinch of cinnamon
2 whole wheat tortillas
Mix the honey (or agave nectar), peanut butter (or cream cheese), and cinnamon in a bowl. Spread mixture onto the tortillas. Place a whole banana on each tortilla and roll up. Toast until golden brown on each side in a pan. Slice into ½ inch rounds, then serve with toothpicks.
No Bake Energy Bites
A perfect in-between meal to keep you satisfied. Even more perfect with our Shamrock Farms Chocolate mmmmilk!
½ cup chocolate chips
1 cup toasted coconut
1 teaspoon vanilla extract
½ cup nut butter (almond, sunflower or peanut to suggest a few!)
1 cup dry oatmeal
Pour all ingredients into medium size bowl. Stir ingredients until combined. Roll into balls. Refrigerate until firm.
